This Mexican Cauliflower Rice is packed with veggies, protein, and lots of flavor and spice! It's topped with an easy guacamole and chipotle ranch sauce for a tasty
Ingredients
∙ Serves 6
Meat
1 lb Ground beef
Produce
1 head 12 oz riced cauliflower
1 Avocado, large ripe
1 generous dash Chipotle pepper adjust to your taste
1 Cilantro
2 tbsp Cilantro, fresh
1 clove Garlic
3 Garlic cloves
1/2 tsp Garlic powder
1 can Green chilis
1 Jalapeno pepper
1 tbsp Jalapeno peppers
2 tbsp Onion
1/2 tsp Onion powder
1 Red bell pepper
1 Yellow onion, small
Condiments
1/2 cup Chipotle ranch dip, homemade
1 1/2 tbsp Lime juice, fresh
Baking & Spices
1 tsp Chili powder
1/2 tsp Sea salt, fine grain
Nuts & Seeds
1 tsp Cumin
Other
3 Tbsp cooking fat (coconut oil, bacon fat, olive oil, ghee, divided)
1 batch Easy guac (see below:)
