NO BAKE STRAWBERRY KIWI CHEESECAKE PARFAITS

Most of us are very busy wrapping up our year. And with many different things vying for our attention, the New Year’s Party doesn’t have to be a bit to-do. These little individual creamy cheesecake parfait cups are party perfect! Super easy to put together with minimal effort to make a wonderful attention and hand grabber.

It makes it on the winner’s list of any occasion any time of the year for its simplicity and deliciousness. They can be whipped up quickly as a last-minute party dessert and double as a beautiful décor on the table. Pretty. Simple. Sweet.

Ingredients

1 small individual pack or 6 pieces - graham crackers
8 oz. 227 g - cream cheese softened
1/4 cup 56 g - organic sugar
2 cups 473 ml - heavy cream
3 kiwis
8 oz. 227 g - fresh strawberries
12 - Parfait cups with spoons I purchase a big pack on Amazon and keep it handy at all time
14 " - pastry bag and Ateco #6B piping tip
16 " - pastry bag and Wilton #2D piping tip

Instructions
1. Crush graham crackers and set aside until ready for use.
2. Rinse and cut fruits into small pieces.
3. Beat cream cheese and sugar until creamy consistency and sugar granules are dissolved; scrape the sides of a mixer bowl couple of times if necessary. Add heavy cream, scrape the cream cheese off the sides of the mixer bowl, and start beating on low gradually increasing the mixing speed and beat it until smooth in texture for a minute or so.
4. Add 2 tbsp. of crushed graham cracker crumbs onto the bottom of each cup. Fill 16" piping bag and 2D large round tip and pipe 1/4 cup of the creamy cheesecake cream into each cup. Top each cup with cut into small pieces strawberries and kiwis. Fill 14" piping bag and a 6B tip with remaining creamy cheesecake cream and pipe a star on top of each fruit cup, and then sprinkle the cream star and fruits with remaining graham cracker crumbs. Insert spoon into each Parfait cut, and Refrigerate for at least one hour before serving.
