Vegan bao buns with pulled jackfruit

Vegan bao buns are to die for and easy to make. They are filled with succulent jackfruit in a salty-sweet marinade, crunchy veggies, peanuts and herbs.
Ingredients
Vegetarian

1 Coriander, fresh
1/2 Daikon or 1 turnip
1/2 English cucumber
3 Garlic cloves
4 tsp Ginger
1 Peanuts, roasted unsalted
1 Red cabbage
1 Spring onion
2 Spring onions, small
560 g Young jackfruit, green
Condiments
2 tsp Brown sugar or maple syrup
1 Chilli or chilli sauce, fresh
2 tbsp Hoisin sauce
3 tsp Tamari / soy sauce
Baking & Spices
2 tsp Active yeast, instant
300 g Bao flour or all purpose flour
1 heaped tsp Chinese five spice
1 tsp Sea salt, fine
2 tsp Sugar
Oils & Vinegars
1 tbsp Rice vinegar
3 1/2 tbsp Vegetable oil
